Lobster with parmesan

For 4 people

Ingredients :

  • 2 Cuisine & Ocean defrosted raw lobsters 350g
  • 30g butter
  • 4 chopped shallots
  • 2 chopped garlic cloves
  • 20g flour
  • 25cl milk
  • 20g grated parmesan
  • 50g grated emmental
  • salt and pepper

Cut the lobsters in two lengthwise, take out the viscera and then remove the flesh (head, tail and claws) and chop coarsely. Put aside the flesh and the shells. In a saucepan, sauté the garlic and the shallots in the butter, add in the flour and cook for 2 minutes, stirring all the while. Add in the milk little by little and cook until it thickens, while stirring. Add in the lobster flesh and the parmesan. Add salt and pepper and cook at a gentle heat for 3 minutes.
Stuff the lobster shells with the mixture and sprinkle with grated emmental. Brown in the oven for 4 minutes (180°C).
