Put aside the flesh and the shells. In a saucepan, saut\u00e9 the garlic and the shallots in the butter, add in the <span class=\"m_1234323743675478200apple-converted-space\">flour<\/span><u><\/u><u><\/u> and cook for 2 minutes, stirring all the while. Add in the milk little by little and cook until it thickens, while stirring. Add in the lobster flesh and the parmesan. Add salt and pepper and cook at a gentle heat for 3 minutes.<br \/>\nStuff the lobster shells with the mixture and sprinkle with grated emmental.
